Raspberry Sherbert
Ingredients:
1 bag (12 ounces) frozen dry-pack raspberries, thawed.
1 cup low-fat buttermilk ·
2/3 cup sugar
Method:
Combine raspberries, buttermilk and sugar in a blender and make a smooth paste.
Strain the mixture through a sieve and remove seeds. Take a baking dish and place the puree in it, and freeze. After frozen, scrape into food processor and turn until smooth. Serve immediately. Decorate it with a sprig of mint and a few fresh raspberries.
Bunny Cookies
Ingredients:
3 cups all purpose flour
2 teaspoons baking soda
1-1/2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup solid vegetable shortening
1/2 cup sugar ·1 egg
1/2 cup molasses
1-1/2 teaspoons cider vinegar
Method:
Sift flour, baking soda, ginger, cinnamon, cloves and salt onto waxed paper together.
Beat sugar and egg in large bowl together until fluffy. Now beat in the molasses and cider vinegar. After this add the flour mixture until blended and smooth. Form a ball out of the dough, wrap and chill for several hours.
Preheat oven to 375 degrees. Divide the dough in two halves. Roll out half of the dough with lightly floured surface to moderate thickness. Keep the remainder of dough refrigerated while working with first half.
To use a bunny pattern, draw a pattern onto a piece of cardboard. Make sure ears are attached to the head. Cut out pattern. Place pattern on dough and trace with a toothpick. Cut out cookies. Place 1 inch apart on lightly greased baking sheets. Repeat this method till all the dough is used up.
Bake in preheated 375-degree oven for 5-7 minutes or until firm. Let them cool completely.
Easter Nest Treats
Ingredients:
Butterscotch chips
Peanut butter
Spanish peanuts
Chinese noodles
Method:
Melt butterscotch chips, add peanut butter and blend together. Add peanuts and Chinese noodles and blend well. Form into nests on waxed paper and cookie sheet. Cool in refrigerator. Add jellybeans and candy of your choice.
